Kitumbua is a Swahili sweet snack, similar to Kokni’s (Mharashtrians) Sandaan/Sanna, though Sandaan is steamed and this is fried. 2 cups Rice 1 n half cup Coconut (thick) Milk 1 tsp Yeast 3/4 cup Sugar 1 tsp Cardamon Powder 1 Egg Pinch of Salt
Wash and soak rice in water for 2 hrs, drain water. Blend rice in coconut milk tgen add yeast and let it rise. Beat egg, sugar, cardamon powder and salt together, add this in rice mixture and mix well. Fry in kitumbua moulds, using half to one tsp oil on each mould.
