Boil 3 to 4 cups of water in a pan ,Add the potato wedges & 1/2 teaspoon of salt to the hot water .
Cover and cook until the potatoes are three-fourth done.
Strain and pat the potatoes dry with kitchen towel.
Meanwhile, in a bowl, take all purpose flour, red chilly flakes, dried mixed herbs , chat masala powder and salt and mix it very well.
Toss the pototo slices in the spicy flour mixture meticulously, to coat them evenly.
Heat oil in a frying pan.
Drop the coated potato slices in hot oil and deep fry them on medium flame.
Once the potato wedges are well browned, crusty edged and crispy , remove them on an absorbent paper.
Prepare the mayo dip by mixing well all the ingredients listed under dip.
Do the plating and serve hot with curd dip or mayonnaise.
