Soft Spongy Potato Dinner Rolls

Serves 4

  • 250g Bread flour

  • 50g Potatoes pureed/ mashed

  • 1 teaspoon instant active yeast

  • 1/2 teaspoon salt

  • 50g caster sugar

  • 1 egg

  • 1 egg yolk for brushing

  • 80 ml milk

  • 30g soft unsalted butter

  • 1 tbsp sesame seeds optional

  • 1/2 teaspoon oil

    In a bowl add flour, make 3 wells

    Add yeast , salt and sugar in it respectively. Gently mix everything well

  • 03

    Now add milk, egg and potato puree. Potatoes should be well mashed and lump free

  • 04

    Now mix well until dough comes together

    Add butter and knead into very soft dough. Even if dough is sticky it's ok, do not add flour

  • 06

    Coat a bowl with oil. Transfer the dough into the greased bowl. Cover and rest in warm place for 90 minutes

    The dough would have doubled in size. Gently punch the air

    Now generously sprinkle flour on surface. Transfer the flour and knead well for 3-4 minutes. If dough is sticking to surface then add more flour. Note - the dough has to be very soft so be careful while adding flour

    Line baking tray with parchment paper. Divide dough into equal portions

    Shape them into round/ oval and place them on baking tray leaving gap between them. Cover and rest aside for 45 minutes

    Preheat oven to 180. The dough would have again expanded. Now do egg yolks wash on top of each roll. Alternatively you can do milk wash too

    I have sprinkled sesame seeds on top. This is optional

    Bake for 18-22 min until it is evenly golden brown on top

    Allow to rest for 15 minutes.

    Serve warm with butter or gravy as desired. These are soft Spongy delicious rolls
