Firstly finely chop tomatoes and green chillis.
In a pan add oil and all the dry spices (except salt and garam masala) and roast well on low flame.
Now add the tomatoes and green chillis and roast well untill it starts to release oil.
Now add peas and add salt. Mix well. Cover the lid and cook for 5 minutes on low flame so that peas can be soft.
Meanwhile peel the potatoes and dice or chop them.
After 5 minutes add potatoes and garam masala and mix well. Cook fot 5-10 minutes so that potatoes can absorb spices.
After 10 minutes turn off the gas and add green coriander. Mix well and cover for 1 minute.
Open the lid and mix well.
Aalu matar masala is ready. Serve with roti or paratha.
