add flour, water ,salt and oil in a bowl and knead into a smooth dough
in a large mixing bowl add boiled mashed potatoes
Now add chili, coriander seeds, chilli powder, turmeric, cumin powder, aamchur powder, Ajwain , ginger paste, coriander and salt
Mix everything well until well combined
Divide dough into equal portions. Dust surface with flour
Roll into 5 inch diameter circle
Add stuffing at centre and seal completely
Now roll it into thick roti
Cook paratha on both sides on hot tawa. Drizzle oil or ghee generously on top
Serve hot with pickle, curd and butter
