Ingredients

Serves 4

  • 200g cubed chicken breast

  • 1 medium onion cubed

  • 1 medium capsicum or bell pepper cubed optional

  • 200g hung curd

  • 4 tbsp besan

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chaat masala

  • 1/2 teaspoon fennel powder

  • 1/4 teaspoon turmeric

  • 1/2 teaspoon kasuri methi

  • 1/2 teaspoon cumin powder

  • 1 teaspoon Garam masala or chicken masala

  • 1/2 tbsp ginger garlic paste

  • 3/4 teaspoon rock salt or to taste

  • 2 teaspoon red chilli powder adjust

  • 2 teaspoon lemon juice

  • 1 teaspoon coriander powder

  • 2-3 tbsp oil

  • 8-10 spring roll sheets

  • 3 tbsp mint chutney

  • 1 tbsp mayonnaise

  • 1 green chillies finely chopped

  • 4 tbsp refined flour paste for sealing

  • 1 teaspoon grated ginger

  • 1-2 tbsp chopped fresh mint leaves

Directions

    whisk hung curd in a bowl until smooth

  • 02

    add and all the spice powders, ginger garlic paste, besan, rock salt to hung curd and whisk well

  • 03

    added cubed chicken onion and bell pepper marinate and rest aside for 2 hours or overnight (preferable)

    brush the grill Pan with oil. place marinated chicken ,onion and bell pepper on the pan .I have not inserted on skewers as as I wanted even texture to chicken and veggies. Grill on both sides until golden brown

    now Chop the chicken and vegetables into smaller pieces and transfer them to a bowl

    add lemon juice ,mint chutney , mint, grated Ginger ,green chillies and mix well

    place spring roll sheets on the board in a diamond shape and place the chicken filling on one side

    Fold from 3 side like envelope. Apply flour paste on the open end. Tightly and carefully roll the sheets and seal the edges

    Deep fry over medium heat until golden brown

  • 10

    Drain excess oil over tissue paper

  • 11

    Serve warm with sauce or green chutney
