BBQ Chicken Salad In Lavash Wraps

Ingredients

Serves : 4
  • For Lavash wraps ::: 2 cups all purpose flour


  • 6-7 tbsp warm water


  • 3/4 teaspoon salt or to taste


  • 1 teaspoon sugar


  • 1/2 tbsp poppy seeds optional


  • 1/2 tbsp sesame seeds


  • 3/4 teaspoon instant active yeast


  • 1 tbsp olive oil


  • For Filling: 250g boneless chicken breast


  • 2 small corn tortillas cut into thin strips


  • 1 teaspoon salt or to taste


  • 1/2 teaspoon pepper or to taste


  • 4 cups shredded lettuce


  • 1 cup shredded cheese


  • 1/2 cup corn


  • 1 tomato seedless diced


  • 1/4 cup or more Barbecue sauce or to taste


  • 1/4 cup or more chopped cilantro leaves


  • 1/2 cup cooked black beans


  • 6 tbsp sour cream


  • 2 tbsp mayonnaise


  • 2 cloves garlic minced


  • 1 teaspoon lemon zest


  • 1 tbsp lemon juice

Directions

  • For wraps: in a bowl, add flour and make 3 wells
  • Add yeast, sugar and salt respectively. Gently mix everything
  • Now add warm water and knead into smooth soft dough. Coat the dough with oil and place in oil coated vessel
  • Cover and rest dough aside for 60-90 minutes until doubled in size
  • Punch dough and release air. Knead dough for 5 minutes
  • Divide dough into equal portions. Cover and rest aside for 30 minutes. Roll dough portion into thin rectangle or oval shaped , sprinkle sesame seeds and poppy seeds on top. it should be like pizza crust. prick on wrap with fork all over
  • This is generally cooked on tandoor or alternatively can be cooked in oven too. Cook on both sides on tandoor. For oven , line tray with parchment paper. Place roti on top. Bake for 20 minutes until golden brown in preheated oven at 170. Keep wraps aside
  • Season chicken breast with salt and pepper. Grill or sear the chicken breast until done on both sides. I have grilled chicken in grill pan. Now slice chicken into strips lengthwise and keep it aside
  • In a bowl, mix sour cream, mayonnaise, salt, 2 tbsp cilantro, lemon juice, lemon zest and garlic. Keep it aside
  • Deep fry corn tortilla strips until golden and crisp. Drain excess oil over tissue paper. Sprinkle with little salt and keep it aside
  • In another bowl, add lettuce, cheese , corn , cilantro, black beans, tomato. Toss well to combine
  • Now to assemble, place Lavash wraps on plate
  • Add the salad greens mix first followed by sour cream dressing on top
  • Sprinkle tortilla strips on top, place chicken strips on top
  • Now drizzle barbeque sauce generously all over
  • Carefully roll the wraps and allow wrap to rest on its seam. Repeat process with all the wraps
  • Serve the delicious wraps with leftover tortilla strips
