Ingredients

Serves 6

  • Ingredients for making Pinto beans and sweetcorn mixture: -

  • Onion chopped 1 medium sized

  • Olive oil 1 tbsp

  • Cayenne Pepper 1/4 tsp

  • Dry chilli flakes 1/4 Tbsp

  • Pinto bean 1 can

  • Sweetcorn boiled 1 cup

  • Salt and pepper according to taste

  • Ingredients for making sun-dry tomato rice:

  • Cooked rice 2-3 cups

  • Sun dried tomatoes chopped 10-12 no

  • Fresh lemon juice 1 tbsp

  • Salt and pepper according to taste

  • Ingredients for making salsa: -

  • Finely chopped tomatoes 1 cup

  • Finely chopped onion 1/2 cup

  • Finely chopped coriander 1/4 cup

  • Fresh lemon juice 1 tbsp

  • Black pepper powder 1 tsp

  • Salt as per taste

  • Ingredients to make Sour Cream: -

  • Whipping cream 1 cup

  • Lemon juice / white vinegar 2 tsp

  • Milk 1/4 cup

  • Ingredients for making burrito wrap: -

  • Wheat flour Tortillas 6 - 8 nos.

  • Cheddar cheese grated1/2 cup

  • Olive oil 1-2 tsp

    Steps for making Pinto beans and sweetcorn mixture: -

    Put oil in a pan and heat it on medium flame.

  • 03

    When the oil is hot, add chopped onion and cook until it becomes transparent.

  • 04

    After the onion is cooked add pinto beans, sweet corn, Cayenne pepper, black pepper, dry chili flakes and cook it well for 1-2 minutes .

    Remove the prepared mixture from flame and keep it aside.

    Steps for making Sun-dried tomatoes rice:-

    Put the cooked rice in a bowl and then add the chopped sun dry tomatoes and lemon juice and toss until well mixed.

    Add salt and pepper to taste. Keep in mind while adding salt and black pepper, we have used both things even in the mixture of beans and sweetcorn.

    Steps for preparing Salsa :-

    Cut the tomatoes, coriander and onion finely.

  • 11

    Mix them all together in a bowl.

    Now add lemon juice, salt and pepper, mix all the ingredients together.

    Cover the prepared salsa and put it aside.

    Steps for making sour cream:-

    Mix the cream and lemon juice (or vinegar) together in a glass jar, then pour milk.

    Tighten the lid tightly and shake well.

  • 17

    Remove the lid and place a clean cloth piece of kitchen paper on the jar and bind it with a rubber band or yarn.

    Leave the jar overnight (24 hours) at the kitchen counter, if your kitchen is warm then keep the jar in a cool place.

    Mix the prepared cream with the help of a spoon after 24 hours.

    Cover the jar with the lid and put it in the refrigerator, this cream can be kept in the refrigerator for up to 2 weeks.

    Steps for preparing burrito wrap:-

    Place one tortilla in a plate.

    In the centre of tortilla place 2-3 tbsp prepared Sun dried Tomatoes Rice, Pinto beans and sweetcorn mixture, 1-2 tsp salsa and 1-2 tsp sour cream spread evenly.

    Spread 2-3 tsp grated Cheddar cheese on the mixture.

    Fold Tortilla from both sides and then roll tightly.

    Similarly, prepare all the burritos.

    Heat the grill pan on medium flame, add 1 tbsp oil.

    Grill prepared burritos for 3-4 minutes from both sides until it turns golden brown and cheese is melted.

    Cut grilled burritos from the middle and serve with salsa and sour cream.
