preheat oven to 170 degrees and prepare two 8 inch cake pans with parchment paper
in a large bowl whisk together flour ,sugars, baking powder ,baking soda, salt ,Cinnamon and nutmeg
add oil and melted butter and blend well
add eggs, one at a time and blend well for 30 seconds after adding each egg. blend for 3-4 minutes
add Vanilla extract and blend well
add carrots and nuts , blend and mix until well combined
evenly divide the carrot cake batter into the prepared baking pans
bake for 30 to 40 minutes until done ( toothpick inserted in the centre should come out mostly clean with only few moist crumbs)
allow carrot cake to cool in the Pans for 10 minutes , then invert onto the cooling Rack and cool cakes completely
I have sliced the top layer of the cake for frosting to even the surface this is a optional step
for frosting:: blend butter and cream cheese in a large bowl until creamy, well combined and lump free
add vanilla essence and Sprinkle salt into the bowl and blend well to combine
gradually add the powdered sugar and blend until ingredients are completely combined. It should be of thick frosting consistency
now place the first cake on a board/ serving plate. add the frosting on top of the cake and spread evenly
place second cake on the top . Now Frost on the top and the sides evenly
I had divided the frosting initially to make carrot design on the top. The design is made from frosting and not fondants. Design and decorate cake as desired
