Ingredients

Serves : 2
  • 4 roti readymade or made at home


  • 1/2 cup guvava


  • 1/2 cup pineapple


  • 1/2 teaspoon chilli powder


  • 1/2 teaspoon turmeric powder


  • 1/2 teaspoon grated ginger


  • 1 pinch Hing


  • 1 teaspoon lemon juice


  • 1/2 teaspoon jeera powder


  • 1/2 teaspoon sugar


  • 1/2 cup Coriander chutney


  • 1/2 cup Sweet chutney


  • 1 teaspoon Cherry to garnish (optional)


  • 1/2 tsp Jeera for tadka


  • 1/2 tsp Saunf powder


  • 1 onion thinly sliced soaked in lemon juice for an hour

Directions

  • First make green chutney to make it half cup of coriander and handful of pudina leaves wash well drain and blend it with half onion 2 green chilli and a teaspoon of tamarind pulp. Blend well and keep aside.
  • Then make sweet chutney: method one Lemon size tamarind pulp 6 dates blanched and deseeded half teaspoon jaggery salt a pinch chilli powder half teaspoon jeera half teaspoon saunf half teaspoon.. boil all ingredients well to get thick consistency. Keep aside.
  • For stuffing / Subji : Take oil in a pan add full jeera to it then hing Then turmeric powder. To this add cut pieces of guava and pineapple, grated ginger chilli powder jeera powder saunf powder and mix and simmer by adding 3 teaspoon of water to it. Let the flavours soak in. Let it simmer for one min. Let the gravy dry then switch of the flame and add lemon juice.Stuffing is ready. Sugar is optional so when to add sugar when you add the masala you can add sugar.
  • Take one roti layer it with green chutney then add stuffing then layer it with sweet chutney and layer thinly sliced onions and close it with help of toothpick garnish with one piece guvava one piece pineapple and a cherry. You can serve with same Subji like a salad on a pineapple base
  • Repeat the process for other rotis.
  • It takes time to make but worth spending the time, it’s a burst of flavours in the mouth so you will feel refreshed.
