Ingredients
Serves 4
230g boneless chicken breast
4 tortillas
1/2 of big bell pepper
1/8 teaspoon salt or to taste
1/8 teaspoon pepper or to taste
1/4 teaspoon balsamic vinegar
1/8 teaspoon garlic powder
8 small thinly sliced mozzarella cheese or 1/4 cup grated parmesan cheese
4 tbsp chopped olives
4 tbsp mayonnaise or salad dressing
10-12 fresh basil leaves
4 tbsp chopped Lettuce optional
4 slices thinly sliced tomatoes
1 teaspoon salt or to taste
2 tbsp butter
1/2 teaspoon Italian Seasoning
1/4 teaspoon extra virgin olive oil
1/2 teaspoon black pepper
Directions
Place bell pepper on baking tray lined with foil and bake for 15-20 minutes until sides are well chared and skin is completely wrinkled . turn them around in between to ensure even roasting .On cooling , discard the peels, slice them into pieces
Add 1/8 teaspoon salt, pepper, garlic powder and bell pepper in a bowl. Now add vinegar, Italian seasoning , olive oil and mix well. Keep it aside. it's best to prepare roasted peppers ahead of time as they taste better on resting. You can skip adding the pepper in the recipe and directly proceed with the next step for wraps too
while pepper is roasting, slice boneless chicken breast horizontally, this well help in easier and even cooking. Marinate with salt and pepper. rest aside for 10-15 minutes
Heat butter in non stick pan over medium heat. Add chicken breast and cook on both sides until golden brown and juices run clear when pierced with fork
Cut chicken into thin strips and keep it aside
If using parmesan cheese then mix mayonnaise and cheese in a bowl Place tortilla on serving plate
Spread cheese mixture on it. If using Mozarella cheese then spread mayonnaise on tortilla and place thinly sliced cheese on one side of the tortilla
Now place the roasted pepper mix and chicken strips, top with lettuce, olives, tomato, basil. You can always reduce or increase the quantity of toppings as desired
Roll the tortilla and wrap up like burritos. Serve as is or with sauce
