Ingredients

Serves : 4
  • 3/4 cup Jaggery


  • 3/4 cup coconut milk, or more if required


  • 1/2 cup soya bean flour


  • 1/2 cup wheat flour


  • 1 teaspoon Baking powder


  • 1/2 teaspoon baking soda


  • 1/4 cup choco chips


  • 1 cup mixed chopped nuts of your choice


  • 2 tablespoons slivered almonds for garnish


  • 2 tablespoons choco chips for garnish

Directions

  • Take jaggery and coconut milk in a bowl
  • beat to mix well
  • whisk together soya and wheat flour with baking soda and baking powder
  • add flour to wet mixture in 2 portions
  • whisk gently in one direction for smooth batter
  • do not overmix batter
  • add chopped nuts and choco chips
  • grease and line a loaf tin, I used my 11×4 inch tin for this cake
  • pour the batter and garnish with choco chips and slivered almonds and nuts. bake in preheated oven @160 degree C for 45 minutes.
  • toothpick inserted in the centre must come out clean. once done, cool over wire rack.
  • slice and serve to your guest for Easter or any occasion
