For pita bread :
In a small bowl put 1/2 cup water add sugar and yeadt and keep aside for 10 minutes so that the yeast can proof
In a large mixing bowl put bothe the flours and salt and mix well.
Now add in the proofed yeast mixture and mix well.
Now add in the oil and stir again
Add water little by little and prepare a soft dough.
Cover it with a damp cloth and keep aside for an hour.
After an hour divide the dough into 8 pieces and shape it into rounds.
Cover and again let it rest for 10 minutes.
Now roll each of the ball into a round chapati shape with 1/2 inch thickness and cook it on a pan from both the sides till lightly golden
Store each prepared pita, wrapped in a muslin cloth until use.
For the chicken filling :
Mix all the marination in the chicken and refrigerate it for a minimum of 2 hours.
After 2 hours take it out and grill it on a grilling pan with 1 tbsp oil and season it as per your taste
For the tzatziki sauce :
In a large mixing bowl put the greek yogurt and add in salt, pepper and garlic
Mix well
Squeeze water from the grated cucumber and add it to the yogurt
Mix in the dill leaves and olive oil
Cover and refrigerate until use
To prepare the Greek chicken gyros :
Take a pita and add in slices of tomatoes, onion, cucumber and olives.
Now add chicken filling about 6-7 pieces
Now pour a generous helping of tzatziki sauce over this
Adjust the seasoning
Wrap the pita and serve the gyro with some more tzatziki sauce.
