Ingredients

Serves 6

  • Pumpkin (Kadoo) 1 medium sized

  • Onions (pyaaz) 2 medium sized

  • Garlic (lehsun) 6 cloves

  • Tomatoes (tamatar) 2 medium sized

  • Fenugreek seeds (Methe) 1 tablespoon

  • Tamarind (Imli) 2 tablespoon

  • Brown sugar (shakkar) 2 tablespoon

  • Fenugreek Leaves (kasoori methi) 1 tablespoon

  • Coconut oil (nariyal teil) 2 tablespoon

  • Salt (namak) 2 teaspoon

  • Turmeric (haldi) 1 teaspoon

  • Red chilli powder (laal mirch) 2 teaspoon

  • Mango powder (Amchur) 1 tablespoon

  • Chaat masala 1 teaspoon

  • Oil to fry 1

Directions

    Cut pumpkin in 1inch squares

  • 02

    Fry them in hot oil on medium flame for about 5 to 7 mins

  • 03

    Put them aside while you make the Gravy

  • 04

    Now take coconut oil in a pan and put flame on medium.

    Put fenugreek seeds and sauté them well

  • 06

    Add garlic paste and sauté it untill its golden brown

    Now add onion paste and sauté them as well untill it has changed its colour

    Now add tomato paste and stir it well

    Put tamarind in warm water and set it aside for a bit while the onion and garlic paste is getting roasted

    Now strain the tamarind water and add the water in the pan and mix it well

    Add brown sugar and mix it well

  • 12

    Add all the spices i.e. Salt, red chilli powder, Turmeric, mango powder, Chaat masala

    Add fried pumpkin in the Gravy

    Lastly add fenugreek leaves and put the lid for 10 mins

  • 15

    Serve hot with Puri or roti
