Ingredients

Serves 3

  • 1___For the filling___

  • 1 tsp olive oil

  • 1 tsp chopped garlic

  • 1/2 cup rajma beans (soaked overnight)

  • 1 capsicum finely chopped

  • 4 spring onions (bulb&greend), finely chopped

  • 1-1/2 tbsp tomato sauce

  • 1 tsp sweet paprika

  • 1 tsp cumin powder

  • 1/2 tsp Salt

  • 2_for maxicun sauce

  • 1 tbsp olive oil/ butter

  • 1 capsicum chopped

  • 3 tomatoes Sliced

  • 1 tsp garlic cloves crushed

  • 2 white spring onions chopped

  • 1 tbsp flour

  • 1 tbsp vinegar

  • 1 tsp sugar

  • 1/2 tsp Salt(adjust according to your taste)

  • 1 tsp chilli flakes

  • 1/2 tsp oregano

  • 1 tbsp habanero sauce

  • 1/2 cup water

  • 3-for garnish

  • 1 cup mozzarella cheese

  • 1 tbsp Spring onions green chopped

  • 2 tsp chilli flakes

  • 4____

  • 3 piece of tortilla

Directions

    To begin making the maxicun enchiladas we will first preheat microwave oven at 180 d.c.

    now Make filling

    Heat oil in a microwave safe bowl for 1 minute

  • 04

    Add 1 tsp finely chopped garlic,saute for a minute

    Next thing goes in is chopped spring onions

    Give it a light stir,again microheat for 1 minute

    Add finely chopped capsicum cook for 1 minute

    Mix well

    Add boiled beans add salt, sweet paprika, cumin powder,mix well again microheat for 3_4 minutes

    Mash half the beans with spoon or potato masher

    Mix well cook for 3_4 minutes your stuffing is ready

    Now time to make gravy (sauce)

    Heat oil in a microwave safe bowl

    Add capsicum, saute ,cook for 2 minutes

    Add in crushed garlic white spring onions chopped tomatoes 1 tbsp refined flour along with this add 1 tsp sugar vinegar sweet pepper coriander leaves and salt and 1/2 cup of water

    Mix all ingredients well, cook for 10 minutes , remove from microwave blend the mixture make puree

    Add harbenero sauce

    Now take a baking dish,at the bottom spread sauce with spoon

    Take tortilla disc place 2 tbsp bean mixture,roll it

    Prepare all ,keep them in the baking dish over sauce

    Place seam side down

    Pour remaining sauce over filled tortilla

    Sprinkle cheese over tortilla

    Place the bean enchiladas in microwave and bake for 10 minutes at 180 dc,or until cheese is golden

    Remove baking dish from microwave,cut and serve hot
