Ingredients

  • •1 cup of all purpose flour


  • •½ cup palak puree • Salt acc to taste • Oil for frying For Filling-: •1/4 cup grated paneer (cottage cheese) •1/4 cup chopped cabbage ½ cup onion slices •1/4 cup grated carrot •1/4 cup bell-pepper, cut into 1/2-inch long thin strips •2 tbsp cilantro (coriander leaves), finely chopped • 1 chopped green chili • 1 chopped tomato •1 tsp chilli powder •¼ tsp jeera •1 ttsp coriander powder •½ tsp garam masala •⅛ tsp turmeric •½ tsp jeera powder • cheese • Mayonnaise •2 tsp lime/lemon juice (optional) •Salt to taste

Directions

  • In a mixing bowl, mix the flour along with a little salt,palak puree with enough water into a smooth dough. Brush with a little oil and cover and set aside
  • Heat the pan,add some oil now add the onion slices, cabbage, carrot, and bell-pepper, along with salt and chilli powder,garam masala,coriander powder ,jeera n haldi powder and stir-fry for a minutes. Now add chopped tomato & stir until they cook well. Add the paneer and stir for a couple of seconds. Remove in a plate and let cool to room temperature. Stir in the the lime juice and coriander leaves.
  • Divide the dough into 1-inch diameter balls. Take a dough ball and roll on a floured surface into a very thin roti. Now place the roti in to tawa n make a paratha with oil. when both side is cooked well, Place 2 tsp of the vegetable and paneer,cheese n mayonnaise filling on a roti and roll it. Seal the edges and repeat with the remaining.
  • Heat the oil in a frying pan and shadow fry the paneer spring rolls until lightly golden.
  • Repeat with the remaining spring rolls.
  • Serve the rolls warm with tea or coffee.
