Ingredients

Serves : 4
  • 375g chicken tenerloins


  • 1 Tbsp cornflour


  • 3 to 4 tsp curry powder


  • 2 Tbsp Olive oil


  • 3 spring onions (or any onion)


  • 3 1/2 cups of natural unsweetened yogurt


  • 2 eggs


  • 400g mother earth spinach lasagne


  • 1 with Garnish Spring onion greens

Directions

  • Cut tenderloins in half lengthwises
  • Mix Cornelius and curry powder together in plastic bag
  • Toss chicken in mixture
  • Heat oil in a frying pan and cook chicken for 3 to 5 minutes or until just cooked
  • Slice spring onions
  • Lightly beat eggs
  • Mix spring onions, chicken, yogurt, and eggs together
  • Oil a dish
  • Cut a sheet of lasagne to fit base of dish
  • Spread with a layer of chicken mixture
  • Repeat layering
  • Finishing with a chicken mixture layer
  • Cover tightly with tin foil
  • Bake at 180 Celsius for 20 to 25 minutes or until pasta is tender
  • Garnish with spring onions
