  • 10-12 Arvi Pantras 2 cups Besan (Gram flour) 1/2 cup Rice flour Salt (as required) 1 tsp Chilli powder 1/4 tsp Turmeric powder 1 cup Yogurt 1/2 tsp Baking powder 2 tbsp Oil 1 tsp Sesame few chopped Curry leaves 1/2 tsp Mustard seeds 2 Green Chillies (pounded) 1/2 tsp Corriander powder 1/2 tsp Cummin powder 1/2 Lemon juice

Directions

  • Keep steamer on boil. Remove stems from the leaves and wash them. In a bowl put the ingredients from number one to seven mix well to a thick batter. Heat 1 tbsp oil in a baghar pan add sesame, cummin and mustard seeds, let it splutter then add to the batter and mix. Place a leaf on wrking table apply the batter generously on it, place other leaf on it and apply batter pile up 5-6 leaves. Now roll the layers of leaves like swill roll and pin up with toothpick. Do same for another 5-6 leaves. When done keep the rolls for steaming till done. Remove and let it cool, cut 1/2 inches slices and keep in platter. Can either give vaghaar of mustard seeds, sesame, curry leaves and green chillies and pour over the arvi bhajias. Or just deep fry them.
