Cook the plantains in a steamer, untill they cook well and turn soft
Peel off the skin and remove the middle seed portion of the plantains
Mash the cooked bananas once it cool down. Mash it with hands or pulse in the mixer.
Add a little ghee and mix well without any lumps. Keep it a side
For filling : Heat 1 tbs Ghee in a pan and add cashews, raisins and grated Coconut and cardamon powder and fry till the coconut starts to change the colour, switch off the flame and Add sugar. Mix well and keep aside.
Grease your plam with ghee pinch medium ball of banana and flatten them in your plam
Add a spoon full of coconut mixture and shape it in the shape of spindle (unnakaya) sealing the edges
Roll it in your plam without cracks
For frying : Heat oil in a deep frying pan. Fry this stuffed banana (unnakai) at medium heat until it become light brown. remove it on to a plate lined with tissue paper to drain away excess oil.
Serve it with tea or coffee.
