Bean & Tomato Salad

Ingredients

1 cup white small beans
1 cup green bell pepper
2 carrots
1 tbls chicken stock
1 can of tomatoes
1 tbls sweet basil
2 large peaches
1 cup chopped spinach
Directions
Soak beans overnight
Simmer beans for 30min in water
Add chopped carrots and continue to simmer for 5 min
Add chicken stock, chopped peppers and peaches
Add canned tomatoes, spinach and sweet basil the final 5min
Continue to simmer in low heat until beans are soft
