Ingredients

Serves : 4
  • 1 cup cooked basmati rice


  • 2 tbsp oil


  • 1 tbsp chopped garlic


  • 2 tbsp Chili flakes


  • 1/2cup chopped onion


  • 1 /2 cup chopped Capsicum


  • 1/2 cup boiled sweet corn


  • 2 tbsp tomato ketchup


  • For 1 cup beans


  • 1 cup soaked and boiled Rajma beans


  • 1 tbsp oil


  • 1 teaspoon chopped garlic


  • 1 cup chopped tomato


  • 1/2cup tomato ketchup


  • 1 teaspoon chili powder


  • Salt to taste or 1/ 4 teaspoon


  • For 1 cup sour cream


  • 1 cup hung curd


  • 2 teaspoon lemon juice


  • Salt 1/ 4 teaspoon


  • For 2 Cup Salsa


  • 1 cup Chopra tomato


  • 1/2 cup chopped onion


  • 2 tablespoon boiled sweet corn


  • 2 tbsp chopped bell pepper


  • 1 tbsp Chili flakes


  • 1 tbsp chopped coriander


  • 1 teaspoon lemon juice


  • Salt 1/4 teaspoon


  • For 1 cup paneer


  • 1 cup chopped paneer


  • 2 tbsp Peri Peri masala


  • Salt 1/ 8 teaspoon


  • 1 tsp oil


  • For 4 nachos bowl


  • 1 cup Maize flour


  • 2 tbsp refined flour


  • 1/2 tablespoon turmeric powder


  • 1tsp


  • 1 teaspoon red chilli powder


  • 2 cups oil to fry


  • 1/4 teaspoon salt


  • 1 cup grated cheese


  • 1 tbsp mint leaves

Directions

  • For rice
  • Heat oil sote onion and garlic
  • Saute all vegetables
  • Add rice and cook for 2 minutes
  • Keep aside for later use
  • For beans
  • Heat oil add onion and garlic Saute for 1 minute
  • Add tomato and cook till mushy texture
  • Add tomato ketchup and cook for 1 minute
  • Now add cooked Rajma and cook for 5 minutes
  • For Salsa
  • And all ingredients in a Big Bowl and mix well and keep aside for later use
  • For paneer
  • Heat oil in a flat tawa
  • Mix Peri Peri masala and salt in paneer
  • Toast paneer on flat Tawa for 2 to 3 minutes
  • For nachos bowl
  • Add Maize flour refined flour salt in a bowl
  • Add some warm water and kneed like a dough
  • Heat oil in a big wok
  • Divido 2 in a four balls
  • Take a ball roll a Puri with this
  • Pick it with the fork
  • Put it in a Steel strainer press with another Steel strainer and fry it with strainer
  • Try it on medium flame till crisp and Golden
  • Make all bowl like this
  • Keep aside for cooling
  • After cooling it becomes more crispy like nachos
  • Assembling
  • Divide rice beans Salsa paneer in 4 equal parts
  • just before serving take a nachos bowl
  • Fill nachos bowl with a part of rice
  • Press it lightly with the back of spoon
  • Add Rajma beans on one side press slightly
  • Add paneer another side
  • Add Salsa on third side
  • Top with sour cream
  • Garnish with 2 tablespoon grated cheese and mint leaf
  • Repeat same process with another nachos bowls
  • Serve immediately
