In a bowl, add flour and ghee mix well till it resemble bread crumbs. and devide this Mixture in 3 parts.
add red, green and yellow food colour in flour mixture and knead it with needed water.
Now roll out all 3 dough like chapati. .keep all chapati on top of each other alternately brushing each chapati with oil and thandai powder before positioning it on top of the other according to the colour you want in your swirl .
Roll it out again together . Roll carefully into a cigar shaped roll brushing a little water at the end so that it stick properly.
Finally cut the roll into thin slice. press the slice lightly with palm and give a mathri shape
Heat the oil in a frying pan , fry mathri on medium low flame till they are cooked properly.
Now heat a pan add water , sugar and cardamom powder. Cook it till the sugar dissolve and make a thick one string syrup.
Now dip the fry mathri in syrup for 1 min and after 1 min take it out in a plate.
Colourful sweet thandai mathri is ready to serve.
