Ingredients

  • 1 can kidney beans


  • 1 Tomato chopped


  • 1Onion chopped


  • 1 tsp Ginger Garlic paste


  • 1 cup capsicum chopped


  • 1 cup Red And Yellow pepper


  • 1 tsp Curry Masala/ Garam Masala


  • 1 tsp olive oil


  • 1 tsp Oregano


  • 3 tsp Tomato Sauce


  • 1 tsp Chili powder


  • 3 zucchini


  • 1 cup boiled Rice


  • 2 cup Mozzarella Cheese


  • 1 tsp Cumin seed


  • 1 tsp Salt

Directions

  • Cut the zucchini in the half
  • Using a melon baller or metal teaspoon, hollow out the center of each zucchini.
  • Using a melon baller or metal teaspoon, Lightly brush the tops with one teaspoon of olive oil then place them skin side down in the casserole dish.
  • Next warm the tablespoon of olive oil in a large skillet over medium heat. Add the onion and the peppers and cook for 2-3 minutes.
  • Add all the ingredients except cheese
  • Preheat the oven to 400°F
  • Spoon the filling inside of each zucchini boat
  • Bake in the oven for 25 minutes covering with the foil
  • Sprinkle cheese and again bake it for 5 mins more
  • Cook till cheese turns bubbly and brown
