  • 1/2cup Quinoa,soaked in water for ½ hour

  • 1/2cup of cooked vegetables of choice,

  • salt and chilli powder to taste, 1/2 tsp

  • cinnamon powder and cardamom powder ,lemon juice to taste .1/2tsp each

  • For tempering-1 tablespoon oil,

  • 1/2 teaspoon mustard,seeds,

  • 1/4 teaspoon asafoetida

  • 1/2 teaspoon channa dal or 1/2 teaspoon urad dal,

  • a sprig of curry leaves,8 leaves

  • 1 whole red chilli


  • To begin making the Vegetable Quinoa Upma, we will first have to wash and cook the quinoa separately in 1 ½ cup water with salt , till soft on low heat(FOR ABOUT 8-10 minutes). keep aside.
  • Heat oil in a heavy bottomed pan; add mustard seeds, channa dal,red chilli and allow it to crackle and roast until the channa dal turns golden brown.
  • Next add in the curry leaves and asafoetida, peeled peanuts,cashewnuts,raisin and ginger .
  • Stir in cooked vegetables of choice for a few minutes.
  • Cover the pan and simmer for about 3 minutes until all the ingredients come together and the flavors come well into the dry Quinoa.
  • Check the salt and spice levels and adjust to suit your taste. Turn off the heat. Add lemon juice if required.
  • we can garnish prepared upma with fruits of choice,as i garnished with apple leaf and coriander leaves..
