Shahi Gatte Paneer Pulao

  • 1.For Gatte

  • 1 cup gram flour (besan)

  • 1 tsp red Chilli powder(adjust to your spicy)

  • 1 tsp Salt or to taste

  • 1/4 tsp carom seeds

  • 1/4 tsp turmeric powder

  • 1 tsp Oil

  • 2. For Rice

  • 2 cup soaked rice

  • 1 tbsp ghee

  • 1 tbsp oil

  • 2 cardamom

  • 4 Cloves,

  • 1 cinnamon stick

  • 1 tsp cumin seeds

  • 1 bay leaves

  • 3-4 black pepper

  • 8-10 Paneer cubes

  • 1/4 Oil for deep fry

  • .2 tbsp chopped coriander leaves

  • 7-8 cashews

  • 8-10 Raisins

  • 1.1/2 medium size Onion thinly sliced

  • 1 tsp Chilli powder

  • 1/2 tsp Coriander powder

  • 1 tsp Ginger garlic paste

  • 1/4 tsp Garam masala

  • 1 cup tomato puree

  • 2 tsp salt

  • 3.1/2 cup Water or as needed

  • 1/2 lemon juice


  • In the mixing bowl add all ingredients under mention the gatte that are besan, salt, chilli powder, carom seeds, oil mix well.
  • Add required water and make a smooth dough. Then rest it for 15 mins.
  • After take the pinch of dough make it balls.
  • Now take 1 ball and roll it like cylindrical shape. Repeat this process to all balls
  • In the deep pan add water and allow to boil. Once the water start to boiling add prepared gatte rolls and close the lid.
  • Now cook it for 10 mins on medium flame. After remove to plate then cool it completely
  • Next take cooled gattes and cut into small pieces not too thick or nor too thin with help of sharp knife.
  • Heat the oil and deep or shallow Fry the chopped gattes. Until they turns light golden brown colour and keep aside
  • In the same oil fry the Paneer cubes till they turns golden brown colour and keep aside.
  • For Rice :- take the pressure cooker heat the oil and ghee add all whole masala ingredients, Ginger garlic paste saute well. Then add sliced onions fry till translucent.
  • Now add all spices , cashews, Raisins fry for a minute. then add tomato puree stir occasionally . Tomato becomes soft and mushy.
  • After add water and allow to boil.
  • While water start to boiling add soaked rice, half lemon juice and salt to taste mix well. Close the lid and cook for 2-3 whistles.
  • Uncover and add fried gattes, Paneer cubes and chopped coriander leaves. Then gently mix well without breaking rice grains.
  • Cover and cook for few minutes in low flame.
  • Now Shahi Gatte Paneer pulao is ready to .Serve with curd or raita.
