JEERA RICE WITH DAL FRY WITH ONIONS AND SQUEEZE OF LEMON:

Ingredients

Serves : 4
  • 2 cups of white rice (boiled)


  • 3 to 4 tbsp. of cumin seeds


  • 1 Tumbler of water (as required)


  • 1 cinnamon stick


  • For dal fry:


  • 1 tbsp. of turmeric powder




  • 1 tbsp. Of mustard seeds


  • 3 no’s of green chillies


  • 2 tbsp. of red chilli powder


  • 2 tbsp. of ground spice powder


  • 1 tbsp. of coriander powder


  • 1 cup of thoor dal


  • ¼ cup of finely chopped cilantros


  • ¼ cup of mint leaves


  • 2 tbsp. Of asafoetida


  • 2 medium sized tomatoes


  • 2 no’s of onions


  • 1 tbsp. of chopped ginger


  • 2 no’s of garlic cloves


  • 6 to 7 no’s of curry leaves


  • 1 tbsp. of Salt to taste


Directions

  • Directions: For jeera rice: To start with, first take a heavy bottomed sauce pan and turn on to a medium low flame. Once the pan is hot enough, add in coconut oil and once the oil is heat enough, add in mustard seeds and leave it to pop up. Once the mustard seeds are popped up add in cumin seeds, cinnamon stick and saute well. Fry them for few minutes till it leaves out its spiced aroma into the oil. Now add in ground spice powder and mix well. Once done, add in white rice and add warm water and leave it to cook until rice is puffy enough. Add fresh ghee at the time of closing the lid, which enhances the flavor on to the rice. Coconut oil is very healthy and has no side effects to health. Simmer the flame and cook for about 15 to 20 minutes on a medium low flame.
  • For dal fry: To start with, at first boil thoor dal on to a pressure cooker with 2 to 3 whistle’s. Make sure its cooked enough if you are not reliable on to the whistle’s. Now make a ground spice powder by roasting black pepper, cloves, cinnamon, cumin and red chilies. Then blend them in to fine paste over a blender. Or can use ground spice ready made powder. Now take a heavy bottomed sauce pan and turn on to a medium high flame and once hot enough add in oil, mustard seeds, curry leaves, cumin seeds and fry them well. Then add in onions, ginger garlic paste, green chilies (finely chopped), red chilies and saute them well. Now add in turmeric powder, red chilies powder and also the prepared ground spice powder. And stir well. Add in asefotida as to the requirement. Add in finely chopped tomatoes and mix well. Now close the lid and let tomatoes cook well and until smashed. Once done, pour in the cooked thoor dal and combine well. Add in water as per the requirement of thickness and mix well. Add salt to taste. Throw some freshly chopped coriander leaves to it and squeeze some lime juice to it. once done, we will come back with some tempering. For that take a medium sized tempura pan and turn on to a medium flame, add in oil, minced garlic, cumin seeds and saute them well. Add in asafoetida and red chilies powder and mix well, once done give the tempering over the dal
