Ingredients

Serves : 4
  • 10 to 12 small baby eggplant cut in four pieces


  • 1 big diced onion


  • 3 to 4 cloves of garlic and ginger sliced


  • 1 or less tablespoon salt


  • 1/3 tablespoon red chilli powder


  • 1 teaspoon chilli flakes


  • 1 tablespoon or less turmeric


  • 1 tablespoon vegetable masala


  • 1 tablespoon cumin powder


  • 1 tablespoon cumin seeds


  • 1 tablespoon coriander powder


  • 1/4 tablespoon black pepper powder


  • 3 to 4 potatoes long sliced


  • 1 cup Oil to deep fry


  • 1 or 2 green chilli long sliced

Directions

  • First deep fry potatoes.make golden brown
  • Now in one pan put some olive oil
  • Roast ginger garlic green chilli chilli flakes cumin seeds
  • Now add diced onion and all the spices quickly
  • Roast for 4 to 5 minutes
  • Now add eggplant and keep it on very low flame.let sit for 5 to 6 minutes
  • Now add fried potatoes and let mix well.stay on low flame for 9 to 10 minutes
  • Yummy nutritious eggplants with masala is ready to serve
