10 to 12 small baby eggplant cut in four pieces
1 big diced onion
3 to 4 cloves of garlic and ginger sliced
1 or less tablespoon salt
1/3 tablespoon red chilli powder
1 teaspoon chilli flakes
1 tablespoon or less turmeric
1 tablespoon vegetable masala
1 tablespoon cumin powder
1 tablespoon cumin seeds
1 tablespoon coriander powder
1/4 tablespoon black pepper powder
3 to 4 potatoes long sliced
1 cup Oil to deep fry
1 or 2 green chilli long sliced
Directions
First deep fry potatoes.make golden brown
Now in one pan put some olive oil
Roast ginger garlic green chilli chilli flakes cumin seeds
Now add diced onion and all the spices quickly
Roast for 4 to 5 minutes
Now add eggplant and keep it on very low flame.let sit for 5 to 6 minutes
Now add fried potatoes and let mix well.stay on low flame for 9 to 10 minutes
Yummy nutritious eggplants with masala is ready to serve
