Ingredients

Serves : 2
  • Soya chunks 2 cups


  • Almonds 1 cup


  • Cashew nuts 1 cup


  • Oil 2 tablespoons (preferably mustard oil)


  • Cumin seeds 1 teaspoon


  • Finely chopped onion 1 cup


  • Finely chopped tomatoes 1-2 cups


  • Turmeric powder 1/2 teaspoon


  • Red chilli powder 1 teaspoon


  • Kitchen king Masala 1/2 teaspoon


  • Garam masala 1/2 teaspoon


  • Kasuri methi ( dried Fenugreek leaves crushed) 1-2 teaspoon


  • Curd 1 cup


  • Capsicum chopped in chunks 2


  • Fresh cream 1-2 tablespoons


  • Salt 1/2 to 1 teaspoon

Directions

  • Wash soya chunks in water and soak in warm water for 10-15 minutes
  • In a mixing bowl take curd, kasuri methi, 1 tablespoon of mustard oil , turmeric powder, red chilli powder , garam masala, kitchen king masala and salt to taste
  • Mix well everything and prepare a uniform mixture
  • Now squeeze out excess water from soaked soya chunks
  • Add squeezed soya chunks to curd merinate , mix well everything and keep aside covered for some time
  • By the time , prepare curry .
  • In a heavy bottom pan heat oil , add cumin seeds, let them splutter and then add finely chopped onion, Almonds and cashew nuts
  • Saute until golden brown colour and add then add finely chopped tomatoes
  • Now Saute until soft ..and switch off heat
  • Now take half of almonds and cashew nuts from sauteed onion and tomato Masala
  • Take sauteed masala in to a mixie jar
  • Prepare a smooth paste
  • Now heat some more oil in pan , add merinated soya chunks, Saute for some time
  • Now add capsicum chunks and Saute again
  • Add freshly ground masala paste
  • Mix well everything and add 1-2 tablespoons of fresh cream
  • Adjust salt as per taste, mix well , and let it cook covered on low heat for next 5-10 minutes
  • You can add some water also if you want it little thin in consistency
  • Garnish with chopped coriander, remaining almonds and cashew nuts amd seve hot immediately
  • Enjoy endlessly with family and friends, goes best with naan, tandoori roti, paratha or steamed rice ..
