Ingredients

Serves : 4
  • For marinated paneer:-


  • 200 gm paneer cut into cubes


  • 1/4 cup soy sauce


  • 1/4 cup rice vinegar


  • 1/4 cup honey


  • 2tbsp sesame oil


  • 2tsp grated ginger


  • 1tbsp vegetable oil


  • For Creamy banh mi sauce:-


  • 1/4 cup mayonnaise


  • 1tsp soya sauce


  • 1tsp honey


  • 2tsp sriracha


  • For pickled vegetables:-


  • 1/4 cup carrot peeled and cut into matchsticks slices


  • 1/4 cup radish peeled and cut into matchstick slices


  • 1 jalapeno thinly sliced


  • 1/4 cup rice vinegar


  • 1tsp granulated sugar


  • 1/2tsp salt


  • 4 small french baguettes


  • 1/3 cup chopped fresh cilantro

Directions

  • Combine all the ingredients for the paneer marinde except the vegetable oil in a large shallow bowl.
  • Place paneer cubes in marinade and keep for atleast 1 hr.
  • Combine the ingredients for the pickled vegetables in a small bowl.Cover and refrigerate until ready to use.
  • In a small bowl,whisk together the ingredients for the creamy banh mi sauce.Refrigerate until ready to use.
  • Once paneer is marinated ,heat oil in a large pan over medium heat.
  • Once oil is hot, add the paneer.Cook for about 5 mimutes each side,until the paneer is dark and crispy.
  • Cut the baguette in half and then slice each baguette lengthwise to open.
  • Generously spread the creamy banh mi sauce over both sides of each baguette.
  • Add cooked paneer and a small handful of pickled carrots and radish.
  • Top with fresh cilantro and jalapeno and serve immediately.
