Ingredients

Serves : 2
  • Basmati long grain rice 2 cups


  • Soya chunks 2 cups


  • Vertically chopped onion 1 cup


  • Crushed garlic 2 teaspoons


  • Vertically chopped tomato 1 cup


  • Fried onion 2 tablespoons


  • Fried cashew nuts 1-2 tablespoons


  • Salt to taste approximately 1-2 teaspoons


  • Turmeric powder 1/2 teaspoon


  • Red chilli powder 1/2 to 1 teaspoon as per taste


  • Biryani masala 1 teaspoon


  • Oil or ghee 2-3 tablespoons


  • Cumin seeds or jeera 1 teaspoon


  • Cloves 1/2 teaspoon


  • Black pepper corns 1 teaspoon


  • Chopped coriander leaves or mint leaves 1-2 tablespoons

Directions

  • First of all wash basmati rice and soak in sufficient water for 20 minutes
  • Wash soya chunks and soak in warm water for 15 to 20 minutes
  • Add, Cloves, Black pepper corns, 1 tablespoon of oil and salt according to taste in soaked rice and cook for 10 minutes until half done.
  • Chop tomato and onion vertically, take crushed garlic.
  • Take fried onion
  • Heat oil in heavy bottom pan, add jeera , vertically chopped tomato onion and crushed garlic. Fry until soft and golden brown. Add all the spices along with Biryani masala and cook until it starts leaving oil.
  • Squeeze out excess water from soaked soya chunks and add to sauteed onion tomato masala and cook for sometime. Mix well everything and cook covered for next 5 minutes .
  • Now add half done rice to it amd and mix gently everything. Cook covered on very low heat for next 10 minutes . Keep a pan under Cooking pan to avoid sticking from bottom .
  • Lastly, top it with chopped coriander, mint leaves ,and garnish with fried onion and fried cashew nuts.
  • Serve hot with raita or flavoured curd or as it is . It's just yum, enjoy endlessly with family and friends
