Ingredients

Serves : 2
  • 3 cup loni ( or malai -that is preserved for a week by daily removing the malai from milk )


  • 1 betel leaf


  • 2 cloves.

Directions

  • Heat the loni or malai in a heavy bottom pan on a low flame.
  • Keep stirring it continuously.
  • After some time the malai will release ghee and the milk solids would turn light brown.
  • Keep stirring as we dont want it to burn.
  • When all the milk resedue turn light brown and the ghee starts floating drain the ghee in a jar and store it in refrigerator.
  • The leftover milk solid is beri.
  • Remove betel leaf and cloves and add 2 -3 tsp sugar. mix it well and eat.
  • This beri can be used to make different sweets ilke beri wadi, beri cake too.
