Ingredients

Serves : 4
  • 1 cup uncooked quinoa


  • 2 tablespoon peanut oil or other oil


  • 1/2 teaspoon mustard seeds


  • 1/2 teaspoon split black gram urad dal


  • 1 Pinch of asefotedia


  • 5 curry leaves


  • 1 teaspoon green hot chilli


  • 1 teaspoon grated ginger


  • 2 cup water


  • 1/4 cup finely chopped onion


  • 1 cup finely chopped carrots, beetroot and red and yellow bell peppers


  • 2 tablespoon finely chopped French beans ( optional )


  • 1Green coriander or lemon juice for garnish


  • 1Salt to taste


  • 1 Pinch of turmeric powder


  • 1 pinch of garam masala powder

Directions

  • Wash the quinoa several times, drain and keep aside.
  • Heat oil in a pan...add mustard seeds and urad dal and let them sputter .
  • Add chili, asafeotida ,curry leaves , ginger and cook for half a minut
  • Add onion and cook for 5 minutes or until translucent.
  • Add carrot, beetroot and Bell peppers and French beans and cook for 3 to 4 minutes on low medium flame.
  • Add quinoa and roast for 2 minutes with the veggies.
  • Add water and salt , turmeric powder , garam masala powder and bring to a boil.
  • Reduce heat to low-medium flame, cover with lid and cook for 15 minutes. Let the quinoa sit covered for 5 minutes.
  • Garnish with coriander leaves and lemon juice serve hot in brekfast with tea or coffee.
