Wash the quinoa several times, drain and keep aside.
Heat oil in a pan...add mustard seeds and urad dal and let them sputter .
Add chili, asafeotida ,curry leaves , ginger and cook for half a minut
Add onion and cook for 5 minutes or until translucent.
Add carrot, beetroot and Bell peppers and French beans and cook for 3 to 4 minutes on low medium flame.
Add quinoa and roast for 2 minutes with the veggies.
Add water and salt , turmeric powder , garam masala powder and bring to a boil.
Reduce heat to low-medium flame, cover with lid and cook for 15 minutes. Let the quinoa sit covered for 5 minutes.
Garnish with coriander leaves and lemon juice serve hot in brekfast with tea or coffee.
