In a hollow bowl or wide plate add maida
Now add salt and well mix it so that salt is well mixed with flour
Now add baking soda and mix well
Now add sour curd and knead well
Add water slowly and knead well for 10mkn thoroughly
After kneading punch it for other 5min
The rising of bhature and softness is in kneading and punching
Now apply 2 tablespoon of oil to the dough and tuck it
Let the dough rest for 2hrs cover with a damp cloth and set aside
After two hrs dough slightly rises knead again well and make small balls from it
Meanwhile in a vok add oil for deep frying
Now take one ball and add some flour and with rolling pin roll on the dough in one direction auch that you get oval shape
In heneral street food they make oval shape if you prefer you can make it round
Prepare all pooris, make sure oil is super hot now slowly drop your bhature into oil
And with perforated spatula pour oil onto the bhatura and press slightly so that they rise that is phulna/pongadam
Thus bhature is ready serve with chole 😉
