Ingredients

Serves : 3
  • 1 cup Jowar/Sorghum pearls/grains


  • 1-1.5 tbsp ghee


  • 1 tsp Cumin Seeds


  • 1 tsp Ginger-Garlic Paste


  • 2 nos Bay Leaves


  • 5 Peppercorns


  • 2 Cloves


  • 1 Cinnamon Stick (small)


  • 1 Star Anise


  • 1 small onion (choppped)


  • 1/4 tsp turmeric powder


  • 1 tsp coriander powder


  • 2 tsp kashmiri red chilli powder


  • 2 tsp pav bhaji masala powder / garam masala


  • 1 cup chopped veggies (corn, peas, carrots etc.)


  • 50 gm Nutrela Mini Soya Chunks (soaked & drained)


  • 1/4 cup + 1/4 cup water

Directions

  • Soak Jowar pearls/grains overnight and when ready, drain the water and pressure cook them for 8-10 whistles
  • In another pan, heat 1 tbsp pure ghee and add cumin seeds, bay leaves, peppercorns, cloves, cinnamon, star anise and ginger-garlic paste
  • Further add chopped onions, a little bit of salt and cook till translucent
  • Once onions are softened, add turmeric powder, coriander powder, red chilli powder and pav bhaji masala powder and cook till raw aroma disappears.
  • Now add veggies and soy chunks to the masala with 1/4 cup of water. Cover and cook for 5 mins.
  • Then add pressure cooked jowar with another 1/4 cup of water. Cook on a low flame for another 15 mins, stirring periodically.
  • Add salt in the previous step per your taste. Once the texture of jowar looks softer, turn off the flame and serve hot with raita!
