Soak Jowar pearls/grains overnight and when ready, drain the water and pressure cook them for 8-10 whistles
In another pan, heat 1 tbsp pure ghee and add cumin seeds, bay leaves, peppercorns, cloves, cinnamon, star anise and ginger-garlic paste
Further add chopped onions, a little bit of salt and cook till translucent
Once onions are softened, add turmeric powder, coriander powder, red chilli powder and pav bhaji masala powder and cook till raw aroma disappears.
Now add veggies and soy chunks to the masala with 1/4 cup of water. Cover and cook for 5 mins.
Then add pressure cooked jowar with another 1/4 cup of water. Cook on a low flame for another 15 mins, stirring periodically.
Add salt in the previous step per your taste. Once the texture of jowar looks softer, turn off the flame and serve hot with raita!
