Peel, wash and cut all the vegetabes.
In a pressure cooker add chopped vegetables (except onion), salt , haldi, 1.5 cup water and close the lid. Cook till 6 whistles blow.
Heat the pan, add oil, jeera, cinnamon stick. Then add onion, saute it for 5 mins, add ginger garlic paste, cook for more 5 mins.
Add tomato puree, all the spices, cook for 10 mins till it starts leaving oil then add chopped coriander.
Now open the lid of pressure cooker, mash the cooked vegetables, add it to pan and mix all the ingredients. Add garam masala, Cover and cook for 10 more mins.
Take French bread slice, apply 1 spoon mayonnaise, put 2 tsp prepared vegetables on it, garnish with chopped tomato onion and coriander. Repeat the same process to make more vegetables mini bites.
Serve hot vegetables mini bites packed with proteins with your favorite chutney.
