Ingredients

Serves : 5
  • 1 Multigrain French bread loaf


  • 1 carrot


  • 1/2 cup peas


  • 1/2 cauliflower


  • 2 potatoes


  • 1/4 cabbage


  • 1/2 cup broccoli


  • 1/2 cup zucchini


  • 4 chopped onion


  • 1.5 cup tomato puree


  • 1.5 tsp salt


  • 1 tsp chilli powder


  • 1/2 tsp haldi


  • 2 tsp pav bhaji masala


  • 2 tsp ginger garlic paste


  • 2 tsp chopped coriander


  • 1 tsp garam masala


  • 1 cinnamon stick


  • 4 tsp oil


  • 1 tsp jeera


  • 1.5 cup water


  • For Garnishing


  • 1 cup Chopped tomato and onion


  • 2 tsp Chopped coriander


  • 1/2 cup Mayonnaise

Directions

  • Peel, wash and cut all the vegetabes.
  • In a pressure cooker add chopped vegetables (except onion), salt , haldi, 1.5 cup water and close the lid. Cook till 6 whistles blow.
  • Heat the pan, add oil, jeera, cinnamon stick. Then add onion, saute it for 5 mins, add ginger garlic paste, cook for more 5 mins.
  • Add tomato puree, all the spices, cook for 10 mins till it starts leaving oil then add chopped coriander.
  • Now open the lid of pressure cooker, mash the cooked vegetables, add it to pan and mix all the ingredients. Add garam masala, Cover and cook for 10 more mins.
  • Take French bread slice, apply 1 spoon mayonnaise, put 2 tsp prepared vegetables on it, garnish with chopped tomato onion and coriander. Repeat the same process to make more vegetables mini bites.
  • Serve hot vegetables mini bites packed with proteins with your favorite chutney.
