First add two glass water in pressure cooker and peel off the eggplant put inside the cooker to boil
Let sit and have 3 whistles
Now in a pan put oil and add jeera
Roast it and add chopped ginger garlic
Now add chopped onion and green chilli
Make them brown but not too much
Add tomatoes chopped
Until tomatoes getting soft.dry roast all the spices in one small dry pan without oil
Now add these roasted spices into onion tomato mixture
Now roast this curry for atleast 20 minutes by covering the utensil and check every after 2 to 3 minutes
Add mashed boiled eggplant inside masala and roast for 20 minutes
When it mixed properly with masala garnish with coriander leaves
Yummy nutritious delicious smashed eggplant curry is ready to serve
