Ingredients

Serves : 5
  • 4 big EGGPLANT


  • 3 big ONION


  • 4 big TOMATO


  • 3 GREEN CHILI


  • 7 to 8 cloves GARLIC GINGER ESTIMATED


  • 1 tablespoon CUMIN SEEDS


  • 1 and half tablespoon SALT


  • 1 tablespoon RED CHILLI POWDER


  • 2 tablespoon TURMERIC


  • 1/3 tablespoon BLACK PEPPER POWDER


  • 1 tablespoon CHAAT MASALA


  • 1 tablespoon SABJI MASALA OR CURRY MASALA


  • 1 tablespoon CUMIN POWDER


  • 1 pinch hing


  • 1 tablespoon dry CURRY LEAVES

Directions

  • First add two glass water in pressure cooker and peel off the eggplant put inside the cooker to boil
  • Let sit and have 3 whistles
  • Now in a pan put oil and add jeera
  • Roast it and add chopped ginger garlic
  • Now add chopped onion and green chilli
  • Make them brown but not too much
  • Add tomatoes chopped
  • Until tomatoes getting soft.dry roast all the spices in one small dry pan without oil
  • Now add these roasted spices into onion tomato mixture
  • Now roast this curry for atleast 20 minutes by covering the utensil and check every after 2 to 3 minutes
  • Add mashed boiled eggplant inside masala and roast for 20 minutes
  • When it mixed properly with masala garnish with coriander leaves
  • Yummy nutritious delicious smashed eggplant curry is ready to serve
  • Optional we can add peas too guys
