Ingredients

Serves : 2
  • 1.For Marinated Sprouts


  • 2 cup Mix Sprouts(Green Gram, Peas, Moth dal, chick pea, fenugreek)


  • 1/2 onion finely chopped


  • 1/2 tsp cumin powder


  • 1/2 tsp coriander powder


  • 1 tsp Garam masala


  • 1/2 tsp red Chilli powder


  • 1 cup plain curd


  • 1/4 tsp cumin seeds


  • 1/2 tsp salt or to taste 1/4 tsp turmeric powder


  • 2. For Rice


  • 2 cup jeera Rice


  • 2 bay leaves


  • 4 cloves, 2 cardamom


  • 4-5 black pepper


  • 1 inch cinnamon stick


  • 1 tsp cumin seeds


  • 2 tbsp Ghee


  • 1 star anise


  • 2 tsp Salt or to taste


  • 3.1/2 cup water.(Which cup u measure the rice same cup use to Adding water)


  • 3.FOR BIRAYANI


  • 1.1/2 onion thinly sliced


  • 2 tbsp Saffron milk


  • 1 tbsp birayani masala


  • 1 tbsp ghee


  • 1 tomato finely chopped


  • 1 tsp Ginger garlic paste


  • 1/4 cup coriander leaves


  • 1/4 cup finely chopped mint leaves


  • 1/2 tsp Salt or to taste


  • 1/2 tsp Garam masala


  • 1/2 tsp Chilli powder


  • 1/4 Oil to deep fry the onions water as needed


  • 2 cup Marinated sprouts mixture


  • 2 cup cooked Rice

Directions

  • Firstly take the mixing bowl and add mix sprout's then add all spices and onion, salt to taste, mentioned under the marinated sprouts.
  • Mix well together with all ingredients. And rest for an hour. and take the rice wash 3 times and add enough water to rice then soak for half an hour.
  • Now for rice take the pressure cooker heat the ghee and add cumin seeds then allow to splutter them.
  • Next add bay leaves, cardamom, cinnamon, star anise, black pepper, cloves, saute well till they becomes aromatic.
  • After add soaked Rice into it. Mix well with the help of spoon.
  • Further add required water, and salt to taste mix well once again
  • Close the lid and cook for 2 whistles
  • After 2 whistles off the flame and cool it completely.
  • Further more take pan heat the oil and add thinly sliced onions and fry them till the colour changes to golden brown colour. and keep aside.
  • take another heavy bottom pan heat ghee next add cumin seeds, chopped tomato, chilli powder, Garam masala, ginger garlic paste saute well.
  • Additionally add marinated sprouts and mix well.
  • Add salt to taste and 1/4 cup water, donot add more water. sprouts should be crunchy. Cover and cook for 5 mins, stirring occasionally
  • After check the cookness and add finely chopped coriander leaves mix well. Now take half portion of sprouts mixture to the plate and keep aside.
  • Further more take the cooked some rice spread on sprouts mixture pan on top. Then sprinkle some fried onions, chopped coriander leaves and mint leaves
  • Repeat this process to u desire layers but last layer becomes rice on top.
  • Next spread the left over fried onion, chopped coriander and mint leaves, saffron milk, Birayani masala powder, garam masala powder on top of the rice.
  • Lastly close the lid and cook for 5 mins in low flame.
  • Finally serve healthy mix sprouts Birayani is ready. sprouts ontains rich proteins . this is my innovative dish in my kitchen....
