2 cups basmati rice 2 onion for frying in oil 1 tbsp ginger garlic paste 2 tbsp oil 1 tbsp ghee 1 tbsp pudina 1 tbsp coriander leaves 3 green chilli 2 to 3 bay leaf 4 to 5 cloves 2 cinnamon sticks 4 to 5 cardamom 1/2 cup curd 200 grams paneer 1 tomato 2 tsp chilli powder 2 tsp coriander powder 1 tbsp salt 1/4 tsp turmeric 1/2 tsp garam masala 1/2 tsp sugar 2 tbsp nuts cashew nuts,almonds and raisins fried in ghee
The procedure are little bit long but the taste is awesome . Soak the saffron in a milk Heat the pan add enough oil for frying slice 2 onion very thin and fry till brown and crisp then add pudhina 1 tbsp fry till crisp then add slit the green chilli fry this also and keep it in the kitchen paper towel. take a pan add about 6 to 7 cups of water let it boil soak the rice for 20 minutes after 20 minutes add soaked rice to boiling water to this add 2 bay leaf 2 cardamom add only the seeds of cardamom and little mint leaves and 1 tsp salt let it cook for 10 minutes or 3/4 cooked. drain and keep this aside Heat the heavy bottom pan add oil and ghee add cinnamon,cloves cardamom seeds and bay leaf fry for 2 minutes then add 1 slice onion and stir then add ginger garlic paste fry till raw smell evaporate add salt then add tomato stir for 1 minute now add masala that is chilli powder,daniya powder turmeric and garam masala and sugar stir on a low flame now add curd mix then add paneer cubes stir well for 2 minutes before adding rice adjust salt according to ur taste now add half boiled basmati rice don't mix on top of that add soaked saffron in a milk then add fried onion and fried nuts cover and cook in simmer for 5 to 10 minutes if want add more ghee in this stage you can add yummy paneer biriyani is ready serve with raita hope you all will like this dish thank you happy cooking friends.
