Ingredients

Serves : 4
  • 2 Potatoes peeled and cubed


  • 1 cup Green peas-fresh or frozen


  • 1 Onion chopped fine


  • ½ inch piece Ginger


  • 6 Garlic 8 cloves


  • 1 tsp. crushed kasuri methi


  • 2 tbsp. Oil or ghee


  • 1/4th tsp. Turmeric powder


  • 1 tsp. Coriander powder


Directions

  • Grind onion or chop finely. Make a paste of the ginger and garlic.Make a puree with the tomatoes in a blender.
  • Heat oil in a non-stick pan, add the ginger-garlic paste. Sauté until brown and add the onions. Now add the kasuri methi and you can smell the unique flavour wafting in the air.The key to a great tasting curry is in the masala. If the masala is not cooked to perfection your curry is not going to taste good.
  • The onion needs to be roasted till golden brown. The onions may stick to the pan, accordingly add a spoon of water until it is golden and the oil floats on the sides.It is now time to add the pureed tomatoes. Keep stirring intermittently or the curry will burn at the bottom of the pan. Add the turmeric, red chilli powder, salt, and cook the tomatoes until the oil floats on top. Only then the masala is said to be ready.
  • Meanwhile peel and dice the potatoes into cubes and add to the cooked masala. Add the washed and sieved green peas, stirring frequently.After five minutes add 2 cups of water. You can cook this curry in the pan itself but I like my masala done in the cooker. Transfer the curry to a cooker adding two more cups of water. Let the whistle blow twice and then switch it off.
  • Open the cooker once the steam is all gone. Sprinkle the coriander and garam masala powder. Your Aloo-Matar Curry is ready.
  • Transfer the Aloo-Matar to a bowl and garnish with the fresh coriander. Serve hot with roti or rice.
