In another bowl whisk butter until light , creamy and fluffy. Add sugar and whisk again till smooth.. Add Vanilla Essence and mix nicely.
Add flour mixture until just combined . Bring the dough together. Wrap in cling film .. Keep in refrigerator for atleast 1 hr. One can keep this dough for overnight also.
Preheat the oven . Line baking tray with parchment paper or aluminium foil.
Take out the dough from refrigerator . Keep on counter for around 10 minutes. Then Just roll a thick disc on a floured surface or between plastic sheets . Disk should be medium thick around 1/4 inch thick .
With the help of cookie cutter , cut into your desired shape.. place all cookies on baking tray . Again chill it for 15 to 20 minutes. Though one can bake it directly too..
Bake on 180C for 8 to 10 minutes or until cookies are slightly brown from the sides. Allow it to cool completely on wire rack. Before dipping in chocolate make sure the cookies are cooled completely.
For Dipping ..
In double boiler , melt the chocolate. Here , I have used the dark chocolate.
For double boiler method , heat water in a vessel . Keep a bowl of chopped chocolate on that vessel. On medium flame allow the chocolate to melt. Mix nicely and make sure it is without any lumps .
Turn off the flame. Allow it to cool a bit. Now half dip the Cookie. I have applied a thin layer of chocolate with the help of fork.
Sprinkle some sugar balls on it. Allow it to set . Store in air tight container
