Pressure cook the pork in 2 cups water with a little salt for 5-8 mins.
Remove & segregate the water & pork seperately
Heat a karahi & add the par boiled pork and stir fry it for 5 minutes
Add the salt and tomato to it & let it cook for 5 minutes for with covered lid
Add the segregated water from pressure cooker & add the garlic paste, dry red chilli paste, (optional king chilli paste) and again cook in low flame for 15-20 minutes on low flame with lid covered
Finally add the sliced bamboo shoot and the remaining water & again cook i low flame for 10-15 minutes with covered lid.
Garnish with freshly chopped corriander & serve hot with steamed rice.
