Heat oil with mustard seeds. Wait for seeds to pop.
Add cumin and urud dhal. Add green chillis shortly after. fry for 30 seconds. avoid burning. Add curry leaves too.
Add cubed carrots and potatoes. fry for about 5 mins. after 3 mins add peas.
Add 3 cups of water.
Wait for water to boil.
Add semolina little at a time, then add larger quantities. in total around 2 to 2 1/2 cups.
Mix quickly and remove from heat once desired consistency is achieved
