Ingredients

Serves 6

  • Old fashioned oats 20 gms

  • Whole Wheat Flour 1/2 cups

  • Greek Yogurt 3 tbsp

  • milk 1/2 cups

  • melted butter 1 tbsp

  • jaggery powder 2 tbsp

  • Vanilla Extract 1 tsp

  • cinnamon powder 1 tsp

  • baking powder 1/2 tsp

  • baking soda 1/4 tsp

  • kosher salt 1/2 tsp

  • red gel food color 3 tsp

  • dutch processed cocoa powder 1 tsp

  • Mascarpone Cheese 1/2 cups

  • Heavy cream 1/2 cups

  • sugar/jaggery powder/any sweetener 2 tbsp

Directions

    Whisk together greek yogurt, milk, melted butter, egg, food color and vanilla extract in a bowl and combine well.

    Mix for 5 mins until frothy. Now add oats to the whisked liquid mixture.

    Meanwhile, preheat oven to 350F or 170C

    Now sieve together flour, cinnamon powder, baking powder, baking soda, and salt in another bowl.

    Fold in dry ingredients into the wet mixture.

    Add more red food color if desired. Make sure you use organic food color to prserve the taste

    Grease a muffin pan with butter and pour in batter. You can add chocolate chips on top if desired. Bake for 15 mins or until a toothpick inserted comes out clean.

    For the frosting: Take 1/2 cup of mascarpone cheese, 1/2 cup heavy cream, 1 tsp vanilla extract and 2 tbsp sugar/jaggery powder/any sweetener and beat together with an electric whisk until fluffy.

    Cool down the muffins on a wire rack once done. Pipe out the frosting on to muffins and serve!
