Red Velvet Whole wheat Muffins with Mascarpone frosting

  • 20 gms old fashioned oats

  • 1/2 cups whole wheat flour

  • 3 tbsp greek yogurt

  • 1/2 cups milk

  • 1 tbsp melted butter

  • 2 tbsp jaggery powder

  • 1 tsp vanilla extract

  • 1 tsp cinnamon powder

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp kosher salt

  • 3 tsp red gel food color

  • 1 tsp dutch processed cocoa powder

  • 1/2 cups mascarpone cheese

  • 1/2 cups heavy cream

  • 2 tbsp sugar/jaggery powder/any sweetener


  • Whisk together greek yogurt, milk, melted butter, egg, food color and vanilla extract in a bowl and combine well.
  • Mix for 5 mins until frothy. Now add oats to the whisked liquid mixture.
  • Meanwhile, preheat oven to 350F or 170C
  • Now sieve together flour, cinnamon powder, baking powder, baking soda, and salt in another bowl.
  • Fold in dry ingredients into the wet mixture.
  • Add more red food color if desired. Make sure you use organic food color to prserve the taste
  • Grease a muffin pan with butter and pour in batter. You can add chocolate chips on top if desired. Bake for 15 mins or until a toothpick inserted comes out clean.
  • For the frosting: Take 1/2 cup of mascarpone cheese, 1/2 cup heavy cream, 1 tsp vanilla extract and 2 tbsp sugar/jaggery powder/any sweetener and beat together with an electric whisk until fluffy.
  • Cool down the muffins on a wire rack once done. Pipe out the frosting on to muffins and serve!
