Ingredients

Serves : 10
  • 1 kg organic green cucumber


  • 2 red peppers


  • 5-6 cloves of garlic


  • 1/2 cup salt


  • 3 cups vinegar


  • 2 tablespoon yellow mustard powder or whole


  • 1 cup sugar


  • 1 tablespoon celery seeds


  • 1/2 teaspoon turmeric powder

Directions

  • Sterile the glass jar in which you are going to store the Pickles.
  • Wash the peppers and cucumber and wipe dry with a clean kitchen towel
  • Slice the cucumber, chop peppers and garlic.
  • Add together in a large bowl, add salt and mix them together. Leave covered for 3 hours. This process will release all the moisture out from the cucumber.
  • Strain the mixture and remove all the water that has oozed out from it.
  • To make brine, heat a pan with vinegar, sugar, turmeric powder, celery seeds and mustard powder
  • Let the brine come to a boil
  • Switch off flame, add cucumber mixture to the brine
  • Pour in sterile glass container. No need for sterilization if you are going to use within 5-10 days. You can just refrigerate the Pickles.
  • To sterilize, wash the glass vessel and its lid in soap and hot water. Keep under The Sun to dry naturally for 3-4 hours or preheat oven and keep the glass jar in the oven for 5-10 minutes on lowest temperature.
  • Store in cool and dry place. Enjoy the Pickles with your favourite sandwiches and rolls
