Sterile the glass jar in which you are going to store the Pickles.
Wash the peppers and cucumber and wipe dry with a clean kitchen towel
Slice the cucumber, chop peppers and garlic.
Add together in a large bowl, add salt and mix them together. Leave covered for 3 hours. This process will release all the moisture out from the cucumber.
Strain the mixture and remove all the water that has oozed out from it.
To make brine, heat a pan with vinegar, sugar, turmeric powder, celery seeds and mustard powder
Let the brine come to a boil
Switch off flame, add cucumber mixture to the brine
Pour in sterile glass container. No need for sterilization if you are going to use within 5-10 days. You can just refrigerate the Pickles.
To sterilize, wash the glass vessel and its lid in soap and hot water.
Keep under The Sun to dry naturally for 3-4 hours or preheat oven and keep the glass jar in the oven for 5-10 minutes on lowest temperature.
Store in cool and dry place. Enjoy the Pickles with your favourite sandwiches and rolls
