Green garlic spinach are available only in winter. So we can preserve it in pickle form throughout the year, as it is very good for health to reduce cholesterol.

green garlic stalks. 6-7 nos
black salt according to your test. 1 pinch
Amchoor powder 1 tsp
White Vinegar 1/2 cups
Rai mustard 1 tsp
green chilli 2-4 nos
Hing 1 pinch
mustard oil 1/2 cups
Wash the garlic stalk and green chili and pat them dry through paper tissue.
After that cut them is small piece and take all ingredients in a mixing jar and give 2 to 3 churn.
It should not be in paste form.
Now pour the mixture in a glass container and add the mustard oil and and now keep the jar outside covering with a muslin cloth to get the sunlight for 4 to 5 days.
After that pickle will be ready to eart.
Serve with hot rice and Parathas.
