  • Fresh Sichuan peppercorns - 2 large bunch

  • Salt 2-3 tbsp

  • Water 2-3 cups or as required


  • Wash the fresh bunch of Sichuan peppercorns with running water thoroughly to remove dirt and impurities.
  • In a large bowl add water and salt . Dip the washed Sichuan peppercorns in the salted water for 20-30 mins.
  • Remove from the water and pat dry with kitchen towel.
  • Lay them in a large wide surface or use a large platter. Randomly separate the peppercorns.
  • Dry them in the sun till it is completely dry and turns brown and hard.
  • Once it is completely dried the peppercorns will open up.
  • Remove the seeds and store in airtight container. It can be stored for more than a year.
