Ingredients

Serves 4

  • 500 gm brinjals

  • 100 ml oil

  • 50 ml vinegar

  • 3 tbsp sugar

  • 1 1/2 inch ginger

  • 2 pod garlic

  • 1 tsp Mustard seeds

  • 1/2 tsp cumin seeds

  • 1 tsp turmeric powder

  • 1/2 tsp roasted fenugreek seeds

  • 10-15 dried red chillis

Directions

    Firstly wash the brinjals and cut into 8 parts

  • 02

    Add turmeric and salt mix well coated to brinjals then rest for an hour.

  • 03

    Grind Garlic , ginger, mustard seeds ,cumin seeds, fenugreek seeds and chillies in vinegar..

    In a pan heat the oil then add the grounded masala and fey well for 2-3 minutes.

    Add the marinated brinjal and sugar mix well after add about 1/2 cup of water.(water used to rinse the grinder jar after grinding masala can be used)

    Cook on low flame for 15 mins till brinjals are cooked stirring occasionallyly

    Store in clean and dry jar once it cooled.

    More oil can be added if required

    Now tangy brinjal Pickle's are ready to serve.
