Ingredients

Serves : 4
  • 500 gm brinjals


  • 100 ml oil


  • 50 ml vinegar


  • 3 tbsp sugar


  • 1 1/2 inch ginger


  • 2 pod garlic


  • 1 tsp Mustard seeds


  • 1/2 tsp cumin seeds


  • 1 tsp turmeric powder


  • 1/2 tsp roasted fenugreek seeds


  • 10-15 dried red chillis

Directions

  • Firstly wash the brinjals and cut into 8 parts
  • Add turmeric and salt mix well coated to brinjals then rest for an hour.
  • Grind Garlic , ginger, mustard seeds ,cumin seeds, fenugreek seeds and chillies in vinegar..
  • In a pan heat the oil then add the grounded masala and fey well for 2-3 minutes.
  • Add the marinated brinjal and sugar mix well after add about 1/2 cup of water.(water used to rinse the grinder jar after grinding masala can be used)
  • Cook on low flame for 15 mins till brinjals are cooked stirring occasionallyly
  • Store in clean and dry jar once it cooled.
  • More oil can be added if required
  • Now tangy brinjal Pickle's are ready to serve.
