Boil water in a big bowl
Add gobhi in it .
Cover it with lid for 5 minutes
Drain water
Wipe gobhi and spread on towel to dry.
Hest oil till smoking point
Take a big bowl
Add gobhi all spices salt and half oil in it .
Cover for 2 hours.
Open kid and mix left over oil .
Mix well
Add sodium benzoate and acetic acid
