Fragrant Raw-Turmeric-Root Pickles

  • 150 grams fresh turmeric root

  • 4 lemons

  • 3 teaspoons Powdered rock salt

  • 2 tsblespoons spicy dry red chilli powder

  • 2 teaspoon dry ginger powder

  • 1 teaspoon black pepper powder

  • 4 tablespoons dry fenugreek seeds

  • 2 teaspoon Fennel flower

  • 5 cloves

  • 8-10 black pepper pods

  • 2 inch long cinnamon stick, broken

  • 1 bay leaf, broken

  • 3/4 cup mustard oil


  • Wash and scrape the skin of the turmeric roots.
  • chop them in circles and spread on a large dish to dry. leave under the Sun for 1 hour or under the fan for 3-4 hours to dry
  • Juice the lemon, strain and take in a mixing bowl
  • Add salt and turmeric pieces and mix well
  • In a pan heat oil, add broken bay leaves, cloves, cinnamon stick, black pepper pods, pepper powder, red chilli powder, fenugreek seeds, dry ginger powder mix and switch off the flame
  • Add the turmeric pieces soaking in lemon juice into the pickle masala, add fennel flower, mix well
  • Let the pickle cool down
  • Store in a sterile glass container
  • Sterilizing the container; Wash the bottle with soap water, leave under the Sun for 4-5 hours or till the bottle is fully dried
